Broccoli Bean & Cheddar Burritos

This burrito recipe just happened by accident one night. I came home late from work and quickly through stuff together and bake it in flour tortillas. It tasted so good I quickly scribbled down the recipe.


1 can stewed tomatoes, chopped or substitute crushed tomatoes
1 can refried beans
1 bag IQF (individually quick frozen) chopped broccoli
2 t hot sauce
5 T. NYF (nutritional yeast flakes)
1 T. chives, dried or fresh, or substitute green onions
1 T. lemon juice
3/4 c. TVP (crumbles) (dry)
1 t. black pepper
1 can black beans, drained, or substitute chick peas, pinto, or what ever kind you like.
Divide the mixture into 8 flour tortillas and fold & roll! Follow the steps pictured in my Spinach & Jalapeno Cheese Burritos recipe. Brush with oil and bake at 425’ 12 – 15 minutes, flip and bake another 12 – 15 minutes.
